Crockpot Recipes for Two
I have started reworking some of our favorite recipes into crockpot recipes for two people instead of five because my husband and I are finding ourselves without our kids at meal times more and more. This used to be such a rare occurrence that we went out to dinner when they were not with us. But now it is happening once or week or more. I cannot remember what we ate for dinner before we had children, but it probably was not anything I wish to duplicate now!
I have moved this post from my former website. This post was one of the all-time favorite posts on that site and the beef stroganoff for two was the favorite of the three (although they are all yummy!)

The convenience and ease of a slow cooker is not something I want to give up even if I am not cooking for a crowd. Below you will find my adapted recipes for Beef Stroganoff, Chicken Tacos, and Chili. I find that they make about 3 servings, which is perfect for me. 2 servings for our dinner and then I have the leftovers for lunch the next day.

FAQs about the Crockpot Recipes for Two:
Over the years I have received several questions.
- What size slow cooker do I use? I own this All-Clad Stainless Steel Slow Cooker. I used to think it was 6 quarts, but it is actually 7. I have not had any issues making smaller recipes in it. Here’s another less expensive version.
- Why one pound of meat for the beef recipes? The two beef recipes will make between 2-4 servings depending on how much you consider a serving to be. I like to have 1 serving left over for lunch the next day. My main intention in cutting these recipes down was to NOT have chili or stroganoff for a week like a normal recipe makes. You can always cut back on the meat if you would like. You will have a bit of extra sauce, but the sauce ingredients are cheap.

I’m trying to make smaller meals and have fewer leftovers too. This recipe hit both of those marks. The meat was very tender and this tasted really good. I made it as given. Next time I’m going to add mushrooms, maybe more cream cheese and try beef broth instead of the water. Husband loved it and says he can’t wait to eat it tomorrow for lunch. Thanks for sharing.

Beef Stroganoff for Two
A crockpot beef stroganoff recipe for 2 people.
Ingredients
- 1 lb cubed stew beef stew meat
- 1 10.75 oz can condensed Golden Mushroom Soup
- 1/2 cup chopped onion
- 1 T Worcestershire sauce
- 1/4 cup water
- wide egg noodles
- 2 oz cream cheese
Instructions
- Season the stew meat with salt and pepper. If you desire, brown the stew meat, but it is not necessary.
- Place all of the ingredients except the noodles and cream cheese in the crockpot.
- Cook on low for 8 hours or on high for 4 hours.
- Cook the wide egg noodles according to package directions. Cook the number of servings you would like.
- Stir the cream cheese into the meat and sauce just before serving.
- Serve the meat and sauce on top of the noodles.
Notes
A green salad is a perfect side dish.
Chicken Tacos for Two
Chicken Tacos for Two
A zesty chicken taco recipe to be enjoyed by 2 people.
Ingredients
- 2 chicken breasts
- 4 oz. Zesty Italian dressing
- 1/2 packet Ranch dressing mix
- 3/4 t minced garlic
- 1/2 cup water
- 1/4 t chili powder
- 1/4 t ground cumin
- Taco Shells, Tortillas, or Tortilla chips
- Taco toppings (lettuce, tomato, onion, shredded cheese, pico de gallo, etc.)
Instructions
- Place everything except the taco shells and toppings in the slow cooker. Stir to combine the ingredients.
- Set the slow cooker to low and cook for about 5 hours.
- Remove the chicken and place on a cutting board. Shred the chicken.
- Cook the shells according to package directions.
- Enjoy your tacos with your choice of toppings.
Notes
This chicken cooks up moist and flavorful. It is great in a taco shell, wrapped in a tortilla, or as part of a nacho stack. It can also be placed on a salad.
Chili for Two
Chili for Two
A chili recipe to be enjoyed by two people without too much leftover.
Ingredients
- 1 pound ground beef
- 1/2 cup chopped onion
- 1 t salt
- 1/2 t pepper
- 15 oz can tomato sauce
- 1 1/2 t cumin
- 1/8 t garlic powder
- 1 1/2 t paprika
- 1 T + 1 1/2 t chili powder
- 1/2 can beans (optional)
Instructions
- Dice the onion.
- Place onion, meat, and salt and pepper in skillet and brown until cooked through.
- Lightly drain the meat and place in a slow cooker. (I usually use a large slotted spoon and transfer it that way. Some of the broth from browning will come with the meat without making your chili too greasy.)
- Add all other ingredients.
- Cook on low 6 hours.
- Serve with your choice of toppings. (Ideas: crackers, fritos, shredded cheese, sour cream, purple onion)
Slow cooker Meals for Two
I hope you enjoy making these slow cooker recipes. Transitioning from cooking for a family to a couple or even just yourself is a big adjustment. I first wrote this post when our kids were in high school and we were eating more and more without them. They are now all grown and living on their own, so most of our meals are for 2. I have gotten used to cooking for just my husband and me and it is fun (and the grocery bill is much much less)!
